An important step: the selection of the steak

For this it is important that the piece of sirloin has the following characteristics:
- To be free from nerves in the meat pulp.
- Have a fat layer which covers about 1 cm of surface.
- Presents a marbled appearance in the area of meat pulp.

Ingredients:
For the chimichurri sauce:
- 1/4 chopped parsley
- 8 finely chopped cannabis leaves
- 1/3 cup chopped fresh garlic
- 1 teaspoon of chopped red pepper
- 2 teaspoons of dry oregano
- 1 tablespoon of red wine vinegar
- 1 tablespoon of kosher salt or pink salt
- 2 cups of olive oil
- 5 ml of cannabis oil
- 30 ml of red wine vinegar
For the rib eye marinade:
- Rib steak
- Sea salt
- Ground black pepper
- Ground garlic
- 5 ml of cannabis oil
- 100 ml of red wine
- 100ml olive oil
Preparation of the cannabis chimichurri sauce
To obtain an excellent chimichurri sauce, first finely chop the parsley with the cannabis leaves. Also finely chopped garlic with red pepper flakes and oregano as fresh as possible, although you can use dry oregano.
After having chopped everything well, you proceed to mix with the red wine vinegar, salt and oils in a large bowl that allows you to combine all the ingredients very well.
Finally, cover the bowl with plastic wrap and let sit in the fridge for three hours so that the flavors are integrated.
Preparing the steak
First of all, we proceed to mix all the spices such as sea salt, ground black pepper, ground garlic, 10ml cannabis oil, 100ml red wine, 100ml olive oil in a large bowl that has capacity to hold the steak (s) and allow all the ingredients to be integrated very well.
Then, you need to cover the bowl with plastic wrap and let it sit in the fridge for about 24 hours so that everything is very well marinated and acquires all the flavor of the spices, but even more so of the cannabis oil.
At the end of the rest period, you are ready to remove the marinated sirloin to let it sit until it reaches room temperature.
This is the time to heat the pan over medium / high heat and add olive oil and a little garlic to taste so that it takes on all the flavor.
You proceed to add the sirloin to the pan and turn it every two minutes until 10 minutes complete or when you consider it ready to the cooking point you like the most.
To give you an idea, with a 3/4 inch thick rib eye, it will take about 10 minutes to cook it at a medium degree, also known as medium rare.
Finally, do them approx. ½ ”coated fillets and slices thick and place them on individual plates and cover with the amount of chimichurri sauce you like. You can also add butter to melt and cover the steak.
