I recommend that you don’t get too excited about the amounts of weed, consider the number of guests and if they have ever tried to eat it. Do not forget that the effect when consumed in food is more intense, even if it takes a little longer to be obvious, so it’s best to take it little by little.
Having said that, let’s get down to business, you may have seen or tried different Italian eggplant recipes, it’s normal for everyone to put in a bit of themselves to give it their own style. However, to prepare the best eggplant recipe, make sure you choose them wisely.
Right off the bat, stay away from those that appear bumpy or have soft areas, and lean towards those that shine and are soft to the touch. It is important that when you support them, they feel heavy and not overripe.
⭐ What do we need to make the recipe?
This recipe is special for a dinner with friends or if you wish with your partner, it is also delicious and out of the traditional, without forgetting that it is simple to make. It’s a perfect excuse to enter the kitchen and discover new dishes with weed.
The quantities are designed to reach about 8 servings:
- 4 medium eggplants (remember we want to avoid the large ones so as not to suffer from their bitter taste)
- 5 tablespoons of olive oil, you can also use extra virgin oil
- Sea salt and ground black pepper both ingredients to taste
- 3 garlic cloves, minced
- 2 yellow onions, medium size, must be chopped
- Fresh basil, chopped, ¼ cup is enough, or two large branches
- ¼ cup tomato paste
- You can also add chopped tomato, in this case 800 grams
- Between 1 ½ or 2 ½ cups of grated mozzarella cheese depending on the amount of cheese you want in your recipe
- 1 cup to 1 ¼ cup grated Parmesan cheese
- 1 teaspoon of vinegar
- 4 grams of cannabis, it must be well ground, it is important that it remains without a single stem. To make sure you’ve crushed it, you can use a grinder.
Additional ingredients: if you want it to be stuffed, you can include Italian sausage to taste, without going overboard, and sliced mushrooms.
Step 1. Prepare your eggplants, cut them vertically, so you will get long, not too thick pieces.
Bake them for about 25 minutes, then heat the oven to about 200 degrees Celsius for about 5 minutes. Before putting them, put a little olive oil on them, also put a little salt and pepper to season them. To even out the browning in the middle of the process, flip the eggplant. Take them out of the oven and leave them ready.
2nd step. You will make the tomato sauce separately, use a medium container, making sure that all the ingredients can be easily worked out. Place two tablespoons of olive oil and pour into the pan, when it is hot, add the onion with a little salt, you can also put a little pepper and garlic.
The objective is to fry the ingredients, here you can add the sausages, if you decide to introduce this element you will have to wait about 8 minutes more for them to be ready. Then put the mushrooms in the pan, stir them until they become small, it will take a few more minutes. Remember this is optional, you can skip this step if you are not a sausage lover.
Step 3. Then put the tomato paste, also add the tomato pieces and stir well so that everything is mixed. Simmer until boiling. When this happens, lower the flame again until you see how the sauce thickens a bit more. It may take about 15 minutes. Finish seasoning the sauce, add salt, as you deem necessary, basil and a little vinegar.
Step 4. Bring on stage the container where you will put all the mixture, the first thing you will do is put the sauce, you can place half or ¾, depending on how much you want. After putting the first layer, it is the turn of the eggplants, place them evenly. Also add ¼ of mozzarella cheese.
It is now at secret ingredient trick, which will make the dish shine, the cannabis. Well ground should also be placed evenly, make sure it is sprinkled well in each corner on the cheese, eggplant and sauce. Finish the seasoning with a little salt and if you want you can add a little more pepper.
Add another layer of eggplant and cover with the remaining sauce and mozzarella cheese. On top of everything, place the Parmesan.
Step 5. The oven is already hot so all you need to do is cook the mixture for about 30 minutes. Some prefer to cover the container with aluminum foil and others do not recommend it. I leave your choice.
After the time has elapsed, remove it from the oven and garnish with basil. He will be ready to be served and enjoyed.
